Happy Toast Tuesday! After a fun holiday weekend of over-indulgence, there's no better way to reset than with a healthy, protein-packed, plant-based avocado toast! That's why this week we teamed up with Marley at
Marley's Menu to bring you the Yep! Greek Avocado Toast!
Serves: 1
INGREDIENTS:
- 1 can chickpeas, drained and rinsed
- 2 teaspoons olive oil
- 1 teaspoon Yep! Shake Greek Seasoning
- 1/4 cucumber, diced
- 1 slice bread of choice, toasted
- 1/2 avocado, sliced
- fresh dill for garnish
HOW TO MAKE THE MAGIC HAPPEN:
- Preheat oven to 425 °F
- Drain and rinse chickpeas and dry with a clean kitchen towel
- Spread chickpeas out on a baking sheet and drizzle with olive oil and season generously with Yep! Shake Greek Seasoning
- Roast for 20 minutes until crispy
- Slice cucumber + avocado and sprinkle with more Greek seasoning
- Toast bread and top with roasted chickpeas, avocado, and cucumber
- Garnish with fresh dill and enjoy!
