“Easy Breezy Caprese” Heirloom Tomato Salad

Wishbone grows heirloom tomatoes from seed every season in his greenhouse and always has plenty to share with friends and family. He adores sharing his love of gardening and seeing the delight in others when they too get to harvest their bounty. In the summer months when the garden is plentiful, we are always looking for fresh and flavorful ways to use the mountains of cherry tomatoes that come off our vines. Some of our family favorites are Cherry Purple, Isis Candy, Green Zebra, and Candy Stripe. Our rule of thumb when it comes to tomatoes is always… the more colorful, the better! We make lots of different salads throughout the summer starring the tomato and this “Easy Caprese” salad is always a homerun.

Serves: 6-8


INGREDIENTS:

  • 2 pints heirloom cherry or grape tomatoes (the more colorful, the better!)
  • 8 oz. fresh mozzarella, diced into small cubes
  • ½ cup fresh basil
  • 2 Tbsp. Yep! Shake Original Seasoning
  • 2 Tbsp. Balsamic Vinegar
  • 1 Tbsp. Extra Virgin Olive Oil

HOW TO MAKE THE MAGIC HAPPEN:

  1. Slice tomatoes in half length-wise.
  2. Dice fresh mozzarella into cubes.
  3. Pro Tip: Chiffonade your basil by stacking all of the leaves in the same direction. Roll them up tightly and then slice through all the leaves at once.
  4. Toss tomatoes with balsamic vinegar, extra virgin olive oil and Yep! Shake Original Seasoning.
  5. Garnish with fresh cut basil and enjoy!
